Welcome to the Bad Day Baking Blog!

When I have a bad day, one of the only constructive things that will calm me down is baking. Some people hit up happy hour after a tough day at the office, some plop down in front of the tv and eat a bag of chips. More often than not, I’ll head home and pull up my ever-growing list of recipes. There's just something about the intense concentration required to bake well that immediately puts me in a better mood.  I’m a scientist at heart, but sadly don’t get to use those skills in my everyday life. Creating something amazing in the kitchen is the closest I get to the fun of research and discovery these days, and it never fails to make me forget about whatever happened earlier that ruined my mood.

Since I'm a night owl and usually start baking late at night, I generally try to make yummy treats that don't take a ton of effort or time. Cupcakes are my personal favorite along with just about anything that combines chocolate and peanut butter. Most of my recipes have originated from something I find on FoodGawker or in an impulse buy cookbook and then have been made over and over again until I've found just the right tweak to make it my own. My co-workers laugh at me because I rarely eat whatever I make, but they generally enjoy taking care of that task for me. All the recipes you'll find at Bad Day Baking have met with their approval!

So grab a bowl and your hand mixer, pull the sugar and flour out of the cabinet, and preheat your oven to 350 degrees.  Whether it's from cracking the eggs or "testing" the chocolate chips, the stress of your day will be gone before you know it!
